buttermilk
Milk + lemon juice
1 cup milk + 1 tbsp lemon juice
Let sit 5 min before using. Works in all baking recipes.
Milk + white vinegar
1 cup milk + 1 tbsp vinegar
Same method as lemon juice. Equally effective.
Plain yogurt + milk
¾ cup yogurt + ¼ cup milk
Thicker than buttermilk. Good for pancakes and biscuits.
eggs
Flax egg
1 tbsp ground flax + 3 tbsp water
Mix and let sit 5 min. Best for muffins, cookies, pancakes.
Applesauce
¼ cup per egg
Adds moisture and slight sweetness. Good for cakes.
Banana
½ mashed banana per egg
Adds banana flavor. Best for quick breads and pancakes.
butter
Coconut oil
1:1 ratio
Solid at room temp like butter. Slight coconut flavor.
Applesauce
½ the amount of butter
Cuts fat significantly. Works in cakes and muffins.
Greek yogurt
½ the amount of butter
Keeps things moist. Good for baked goods.
heavy cream
Coconut cream
1:1 ratio
Refrigerate can overnight, scoop the solid part.
Milk + butter
¾ cup milk + ¼ cup melted butter
For sauces and soups. Won't whip.
sour cream
Greek yogurt
1:1 ratio
Nearly identical in baking. Slightly tangier.
Cottage cheese (blended)
1:1 ratio
Blend until smooth. Works in dips and baking.
all-purpose flour
Whole wheat flour
Replace up to 50%
Denser result. Use ¾ cup + 2 tbsp per 1 cup AP flour.
Almond flour
1:1 ratio but add binding
Gluten-free. Need extra egg or xanthan gum for structure.
brown sugar
White sugar + molasses
1 cup sugar + 1 tbsp molasses
This is literally what brown sugar is.
White sugar
1:1 ratio
Loses moisture and caramel flavor. Works in a pinch.
honey
Maple syrup
1:1 ratio
Different flavor but same sweetness and consistency.
Agave nectar
⅔ cup per 1 cup honey
Sweeter than honey. Use less.
baking powder
Baking soda + cream of tartar
¼ tsp soda + ½ tsp cream of tartar per 1 tsp
Mix fresh each time. Don't store.
milk
Oat milk
1:1 ratio
Closest to cow's milk in baking. Neutral flavor.
Almond milk
1:1 ratio
Thinner than milk. Fine for most recipes.
Water + butter
1 cup water + 1 tbsp butter
Emergency sub. Adds fat but not protein.
